How long have you been in business?
We have been in the business of culinary training since 1983. Our professional program began in 1996.
What is your primary product or service?
We teach a system of cooking that teaches cooking, not recipes. Our language of intuitive cooking is the essence of all cooking for all diets and cuisines. We teach it as an art form, but also we use healing whole food ingredients and begin the training from a place of understanding plant based ingredients and cuisines.
How did you first become interested in your line of business? (if owner) - What is your background? (If owner or store manager)
I was healed with whole food in 1970. I was a dancer/choreographer and had a critical experience that landed me in the hospital. It was clear to me then that the doctors were using me as an experiment. So I walked from the hospital when I was 20 years old and continue to explore the healing aspects of nature on all levels - food, energy, transformation of self and ingredients. When I was asked to create a cooking program for Alfalfa's Market in Boulder, Colorado, I translated my choreographic and teaching skills as a dancer, into observing what I knew about food an cooking. Long story. Alfalafa's did not follow through with opening a cooking school, so I opened The School of Natural Cookery.
How do you differentiate yourself from other businesses in your category and area?
Most cooking schools teach from goals of reaching an end result. For example the name of the dish or a recipe. The ingredients are defined for the student before they begin. We teach how to think like a creative artist, chef. How to organize all the information one needs to invent, troubleshoot, and even evaluate a dish n a recipe before "following" it. Because we are teaching a proven "language" and we have created a powerful online school format that is also proven to work for motivated students, no other cooking school has both the home study and studio session that we have. Plus when we have studio (in our kitchen) sessions, students are in small groups - 4 - 6 at a time and each have their own cooking stations. Other schools group people together to work on dishes together. This works if everyone is following the same recipe. But isn't our style of teaching.
How many locations do you have and do you have plans to expand?
Our physical studios are where there are instructors. We let go of our school-house in Boulder, Colorado after 19 years, and now we rent beautiful environments in unique and practical locations. Currently we have instructors in Oregon and Colorado. Soon to have in Georgia, Ohio, and Casablanca Morocco. The expansion we are working on is to have a European studio location. The most exciting new growth is in the 100% certificate training. This allows students to join our Natural Cook training from all over the world. And they do. We have different start dates to allow for the change of seasons in different hemispheres.
